Our guest today has her Bachelor\'s\\xa0degree\\xa0in\\xa0Food\\xa0and\\xa0Nutrition. She was\\xa0diagnosed\\xa0with\\xa0Celiac\\xa0Disease\\xa0in\\xa02017,\\xa0at\\xa0the\\xa0age\\xa0of\\xa037. She is currently\\xa0a\\xa0stay-at-home\\xa0mom\\xa0to\\xa02\\xa0young\\xa0children. She decided\\xa0that\\xa0since she was\\xa0spending her time\\xa0thinking\\xa0about,\\xa0researching, and\\xa0eating\\xa0gluten-free\\xa0food\\xa0that she should\\xa0share her knowledge\\xa0with\\xa0others.\\xa0Her mom\\xa0passed\\xa0away\\xa0from\\xa0breast\\xa0cancer\\xa0in\\xa02012\\xa0and\\xa0before\\xa0she\\xa0died\\xa0she\\xa0put\\xa0together\\xa0a family cookbook. She wanted\\xa0to\\xa0go\\xa0through the\\xa0 book\\xa0and\\xa0remake\\xa0all\\xa0of\\xa0her\\xa0recipes\\xa0into\\xa0gluten-free\\xa0versions.

In addition, she loves to\\xa0travel\\xa0and\\xa0refuse\\xa0to\\xa0let\\xa0this\\xa0disease\\xa0get\\xa0in\\xa0the\\xa0way!

She decided to start her blog to \\xa0help\\xa0people\\xa0understand\\xa0that\\xa0it\'s possible\\xa0to eat gluten-free and travel. Minneapolis\\xa0(and\\xa0Minnesota)\\xa0is\\xa0an\\xa0amazing\\xa0place\\xa0to\\xa0live\\xa0with\\xa0beautiful\\xa0lakes,\\xa0art\\xa0museums,\\xa0history,\\xa0culture,\\xa0incredible\\xa0people\\xa0and\\xa0a\\xa0great\\xa0food\\xa0scene! She is proud to live in Minneapolis and loves where she lives!

Minnesota may be cold, but the gluten-free scene is hot! We chat about Kari\'s travel experiences before she knew she had celiacs, her amazing experience in Italy and some of her favorite restaurants in the Twin Cities including Spoon and Stable, her favorite digs to eat at Mall of America such as Wallburger and Twin City Grille, the latter of which creates their own in-house gluten-free bread. Benning Brothers, a 100% gluten-free brewery, and Foxy Falafel is also on Kari\'s list of favorites!
