Architect, artist, and entrepreneur Virginia Senior made me a sampler of some of the dishes she created for her restaurant because she "is not just what you see, it's what you taste." I can honestly say, Virgina tastes delicious.

We talked outside of her business, Urban Beans, and discussed how community members can support artists, the craetivity that comes from restriction, and why she treats every pwrson who says they don't like vegan food as a challenge.
