Chef Nick Reisini’s Red and blue election night specials:

Red and blue salad:

Ingredients: - 1/2 cup blueberries - 1/2 cup strawberries quartered - 3 tbsp toasted pine nuts - 3 cups arugula - Juice of half a lemon - 2 tbsp EVOO - ½ tsp dijon mustard - Salt And pepper to taste

Procedure: - In a small bowl whisk your lemon juice and mustard until combined. Keep mixing, slowly stream in your evoo until until combined - In a small sauté pan toast your pin nuts over medium heat until golden moving constantly as they burn very quickly - In a medium sized mixing bowl add your strawberries, blueberries and arugula, dress the outside of the bowl and gently toss the salad (we do this so we don’t over dress or bruise the salad leaves.) season with salt and pepper - Put your beautiful salad on a plate and garnish with your toasted pine nuts and enjoy!!

Red and blue main course:

Ingredients: - 1 pt blueberries - 2 tbsp cold butter - 1 cup red wine - 1 cup chicken stock - 1 10 oz ny strip steak 1.5 inch thick - 2 tbsp neutral oil - Salt and pepper to taste

Procedure: - First and most important take your steak out and let it come to s room temp. - Get a sauté pan on high heat. Once hot add 1 tbsp of oil. Season steak generously with salt on both slides. Once oil shimmering, place steak into the pan facing away from you so if there’s any oil splash it splashes away from you. Sear until edges begin to turn golden brown. Make sure to move steak around a bit to ensure even color. Flip steak and repeat. - Once steak is well seared on both sides, set aside and rest for 5 minutes. - Wipe out your pan. - Bring your pan back up to heat and add the second tbsp of oil. Add the steak back in and cook for another 2 minutes per side. Remove once and more and put aside to rest. - This time put your same pan back onto heat and do not clean. Add blueberries and break them up a bit, cook down for 2 minutes. - Add red wine and reduce until Alcohol has cooked off. Turn off the heat and swirl in the cold butter. This will thicken and give a beautiful gloss to your sauce. - Slice steak against the grain and spoon sauce over!! Enjoy!!
