Mandy’s Zucchini Slice Ingredients 5 eggs 150g grated zucchini 150g Self-raising flour ( says sifted but I didn’t). 1 large finely chopped onion 1 cup grated cheddar cheese 200g rindless chopped bacon 60 ml oil Cracked pepper to taste. Method Pre-heat the oven to 170 C Beat the eggs until combined Add flour and mix, then add zucchini, onion, bacon, cheese and oil and stir to combine. The mixture will be quite sloppy but you can add a little more flour if you like, BUT you don`t want it dry. Grease a baking dish 30 x 20 and pour into the dish and bake for 30 mins or until cooked through. DELISH with a Greek salad (my idea) and a cup of tea in a very nice China cup and saucer!
