Ethan is a hometown boy who has worked in, started, and built many restaurants in Seattle, including seven (yes seven) new ones during Covid. We're beyond excited to hear Ethan's thoughts on how Covid has changed Seattle's restaurant scene, possibly forever, and where he sees the industry heading in the future!
