\nLuis's Cooking Level Up Info:
\nBrine - 1/2 cup salt per 2 quarts water plus 2 bay leaves - use this before roasting anything (chicken, beef, pork) and it will be much better.
\nBrine for 12-24 hours in a ziploc bag, then pat dry before applying dry rub
\nDry rub base:
\n1 tbsp garlic powder
\n1 tbsp paprika
\n1 tbsp chipotle powder
\n1 tbsp cayenne pepper
\n1 tbsp chili powder
\n1 tbsp salt
\n1 tbsp ground pepper

\nFor pork:
\nPork shoulder
\n1/2 cup brown sugar
\nroast at 225 for 1.5 hours per pound
