HIGH PROTEIN SWEET POTATO PIE:

Whip together:
1 Pound Sweet Potatoes (roasted and cooled in oven)
1/2 cup almond milk
2 large
1/2 cup unsweetened apple sauce
2 Scoops Vanilla Protein Powder
\xbe Cup Sweetener (stevia, monkfruit etc)
2 Large Whole Eggs
\xbd Teaspoon Ground Cinnamon
1\xbd Teaspoon Vanilla Extract

Pour batter into a non-stick sprayed pie plate, bake at a 350 degree oven for one hour, then cool, then refrigerate overnight (or at least 3 hours.)

Serve with stevia/monkfruit sweetened whipped cream or pre-made light whipped cream from a bottle.
