I met Mark today at the Cedar Falls Farmers Market where he was selling goods from his family’s “small solar powered, sustainable farm in Waverly, Iowa, specializing in pasture raised poultry, eggs, and cultivated mushrooms.” Mark tells us all about the methodology of his farm and how he became interested in locally sourced sustainable farming. In the latter half of the conversation we talk all things mushrooms. He shows off a beautiful white monster sized Lions Mane mushroom. Note on Lions Mane mushrooms- I take Lions mane mushroom in my coffee nearly everyday. Lions mane in short, boosts cognitive function and I especially find benefit in mental sharpness and focus when I pair it with my coffee.
