Watermelon Cooler:

3 oz diced watermelon

3/4 oz lime juice

1/4 simple syrup

2 oz gin

ginger beer or ale

Muddle first three ingredients. Add gin. Shake. Pour into rocks/collins glass, top with ginger beer, garnish with watermelon slice.\xa0
