Jackie herself is an organic "flower farmer". She enjoys the flowers while her husband handles the acres of organic vegetables. Living in the shadow of the Rocky Mountains gives Jackie some interesting weather patterns and some watering problems. Since they have drilled a new well, watering time is cut down 60%.
Jackie shared her recipe for Squash Flower Recipe:
Pick fresh squash/zuccini/pumpkin flowers. You need to be gentil. Wash them and dry softly with a paper towel. Make a flour and water batter that is kink of runny, about the consistency of pancake batter - but just a touch thinner. Start with a 1/2 cup of flour and slowly add water. Dip the flowers in the batter and saute in olive oil until they are crisp. Lay them on a paper towel until they are cool enough to eat. Enjoy right away.

Jackie has a secret recipe to repell spiders from her home. Just mix peppermint essential oil or extract for cooking in a spray bottle with water and spray window screens, cracks and door jambs.
