For the Grande Partenza of its 102nd edition, the Giro picked a grand old Italian city: Bologna. Famed for its cuisine, its scholars and the porticos that stage 1 to the Madonna di San Luca showcased in all of their glory, the capital of the Emilia-Romagna region sits at the crossroads of Italy. Meanwhile, abroad, it remains best-known for something that didn’t even originate there - spaghetti alla bolognese or, if you want to really wind up the locals, “Spag Bol”. For our first Kilometre 0 of this year’s Corsa Rosa, we went in search of the real Bologna - its cycling and Giro heritage, the people of the city and surrounding regions and, yes, its pasta and ragù sauce.
