The Trader Vic Mai Tai\\xa0
1oz Fresh Squeezed Lime Juice
\\xbd oz Orange Curacao\\xa0
\\xbc oz Orgeat\\xa0
\\xbc oz Simple Syrup\\xa0
1oz dark rum (Jamaican if possible)\\xa0
1 oz Gold rum (Martinique)\\xa0
Shake well with plenty of crushed Ice\\xa0
Pour into double Old Fashioned glass\\xa0
Sink half of a spent lime into the glass
Garnish with mint\\xa0
The Don Beach Mai Tai is more complex as it is more spice and herb based. \\xa0
1 1/2 oz Myer's Plantation Rum, (or Appleton - Funky)
1 oz Cuban Rum (gold)\\xa0
1/2 oz Cointreau
1 dash Pernod
1/4 oz falernum, (sweet syrup)
1 cup cracked ice
Combine rum, Cointreau, Falernum, grapefruit juice, lime juice, bitters, pernod, and cracked ice into a cocktail shaker and shake vigorously like 30 or 40 good shakes. Strain into an old fashioned glass over shaved or crushed ice. Garnish with a sprig of mint.
The Chief Lapu Lapu\\xa0
3/4 oz dark rum
3/4 oz light rum
1 oz lemon juice, freshly squeezed
1 1/2 oz orange juice, freshly squeezed
1 ounce passion fruit puree
1/2 oz simple syrup
Combine all ingredients in a cocktail shaker, fill with ice and shake vigorously. Strain into a rocks glass filled with crushed ice. Garnish with an orange wedge or orange peel, and an umbrella, if you have one.
The Dark and Stormy \\u2013 New England based Rum Runners drink \\u2013 we say that it\\u2019s properly pronounced the Dahk and Stowmy. Very Simple, very refreshing and very delicious. \\xa0
6oz Ginger Beer in lots of crushed Ice
Float 2oz of Gosling\\u2019s Dark Rum on top
Garnish with a wedge of lime.\\xa0 \\xa0

Through a process of reverse engineering and much trial and error, it is believed that at least a close proximity is this\\u2026 \\xa0
4 oz fresh pineapple juice (not from concentrate)\\xa0
Trader Joes or Aldi both have excellent pineapple juice.\\xa0
1 Oz Coconut Cream\\xa0
2oz Gold Rum\\xa0
6 dashes Angostura Bitters\\xa0
Plenty of Crushed Ice
SHAKE VIGEROUSLY - You should have a froth\\xa0
Sprinkle cinnamon on top\\xa0
Serve in the takiest tiki mug you can find. \\xa0
The Jet Pilot \\xa0
Not terribly refreshing, but delicious and it gets you there fast.

1/2 oz Grapefruit juice\\xa0
\\xbd oz Cinnamon syrup\\xa0
\\xbd oz Falernum syrup\\xa0
1oz Dark Jamaican Rum\\xa0
\\xbe oz Gold Rum\\xa0
\\xbe oz 151 proof Demerara rum\\xa0
1 dash Angostura Bitters
6 drops Pernod or absinth\\xa0
\\xbd cup crushed ice\\xa0
Throw it in a blender for about 5 seconds\\xa0
Serve over crushed ice\\xa0
Garnish with a Cinnamon Stick
Nurse this bad boy because if you power it, you will be sky high, up in the clouds\\xa0 in no time.
