(episode since taken down lol) She whips up her tried and true vegan sweet potato chili, a super simple but satisfying meal. Then she is joined by former guest of the pod Anna to talk all things books! They both give 5 recommendations, each one suited for a different type of reader and their preferences. They also chat their favorite genres, what celebrities happen to be scientologists, and Why Every Well Known Book is Written By a White Man. Vegan Sweet Potato Chili:
\\n
\\n - 1 sweet potato
\\n - 1 onion
\\n - 1 cup bell pepper (optional)
\\n - 1 can black beans
\\n - 1 can red kidney beans
\\n - 1 can diced fire roasted tomatoes
\\n - 1 quart of veggie broth (1 package)
\\n - 1/4 cup chili powder
\\n - 2 tablespoons cumin
\\n - 1 tbsp. cayenne (optional, if you like it spicy)
\\n - salt & pepper to taste
\\n - olive oil for cooking
\\n

\\n - Sautee roughly chopped onion in any oil of your choice until translucent in a large pot.
\\n - Roughly chop peppers, if using them, and add them to pot.
\\n - Poke holes in sweet potato with a fork and microwave for 2-3 mins. Chop into cubes and add to pot. Sautee until they\'re a bit browned.
\\n - Add the canned beans (strained) and tomatoes, then stir.
\\n - Add enough veggie broth to cover the sweet potatoes.
\\n - Add the seasonings and bring to a boil.
\\n - Reduce to simmer for 30 min-1 hour, adding more veggie broth if it gets too thick.
\\n - Add cheese, avocado, or crushed tortilla chips on top if desired!
