Dining with Donna 13: Bittersweet Chocolate Espresso Creme Brulee

Included with the episode are the recipes below.\n\nBittersweet Chocolate Espresso Cr\xe8me Br\xfbl\xe9e\n\nIngredients:\n\n\xbd cup chopped bittersweet chocolate\n5 egg yolks\n1\xbe cups heavy cream\n\xbd cup granulated sugar\n\xbc cup espresso\n\xbc cup Demerara or raw sugar\n\nCooking Directions:\n\n1.\tArrange 5 (6 ounce) ramekins or custard cups inside Crock-Pot. \n\n2.\tPour enough water to come halfway up sides of ramekins (taking care to keep water out of ramekins). \n\n3.\tDivide chocolate among ramekins. \n\n4.\tWhisk egg yolks; set aside. \n\n5.\tHeat small saucepan over medium heat. \n\n6.\tAdd cream, granulated sugar and espresso; \n\n7.\tcook and stir until mixture begins to boil. \n\n8.\tPour warm cream in thin, steady stream into egg yolks, whisking constantly. \n\n9.\tPour through fine mesh strainer into clean bowl. \n\n10.\tLadle into prepared ramekins in bottom of Crock-Pot. \n\n11.\tCover; cook on high 1 to 2 hours, or until custard is set around edges but still soft in centers. \n\n12.\tCarefully remove ramekins; cool to room temperature. \n\n13.\tCover and refrigerate until serving. \n\n14.\tSpread tops of custards with Demerara sugar just before serving. \n\n15.\tServe immediately.\n\nMakes 5 servings.\n\nHints and Tips for the Kitchen:\n\nSubstitutions: No Sugar?\n\n* You can often substitute, measure for measure, packed brown sugar (light or dark) with no adjustments.
