Chipotle Cornish Hens\n\nWhat You Will Need:\n\na kitchen knife for cutting vegetables or a vegetable cutter\na can opener\nMeasuring cups\nA crock-pot\na small mixing bowl\na skewer or kitchen fork\na serving platter\na slotted spoon\npaper towels\n\nIngredients:\n\n3 small carrots, cut into \xbd inch rounds\n3 stalks celery, cut into \xbd inch pieces\n1 onion, chopped\n1 can (7 ounces) of chipotle peppers in adobo sauce, divided\n2 cups prepared cornbread stuffing\n4 Cornish hens (about 1 1/2 pounds each)\nSalt and black pepper\nFresh parsley, chopped, optional\n\nCooking Directions:\n\nCoat inside of Crock-Pot with nonstick cooking spray. \nAdd carrots, celery and onion. \nPour canned chipotles into small bowl. Finely chop 1 chipotle pepper. \nRemove remaining peppers from adobo sauce and reserve for another use. \nMix half of chopped chipotle pepper into prepared stuffing. \nAdd remaining half of chopped chipotle pepper to adobo sauce. \nRinse and dry hens, \nremoving giblets if any. \nSeason with salt and black pepper inside and out. \nFill each hen with about 1 cup of stuffing. Rub adobo sauce onto the hens. \nPlace in Crock-Pot, \narranging hens neck down and legs up. Cover; cook on high for 3 and a half to 4 and half hours, or until hens are cooked through and tender. \nTransfer the hens to a serving platter. Remove vegetables with slotted spoon; arrange around the hens. \nGarnish with parsley. \nSpoon the cooking juices over the hens and vegetables, if desired.\n\nNote:\n\nFor spicier flavor, use 1 chipotle pepper in the stuffing \nand 1 chipotle pepper in the sauce.\nChipotle peppers can be very spicy. \nUntil you know how much spiciness you prefer, use the smaller quantities recommended in recipes. \nYou can always add more the next time you prepare the recipe.\n\nMakes 4 servings.\n\nKitchen Helpful Hints:\n\nGot a dirty or smelly Sponge?\n\n* To renew and freshen, soak overnight in salt water or baking soda.\n* Wash in dishwasher.\n\nGetting rid of calcium deposits on Tea Kettles:\n\n* To get rid of lime or calcium deposits, fill with equal parts vinegar and water.
