Chicken Couscous\n\nWhat You Will Need:\n\nMeasuring spoons\nA sharp pairing or chef's knife\n1 can opener\nmeasuring cups\n1 skillet\n1 kitchen fork\n1 skewer\npaper towels\n\nIngredients:\n\n1 tablespoon of olive oil\n8 ounces of boneless, skinless chicken breast, cut into 1 inch cubes\n4 medium zucchini, sliced\n1 can (about 14 ounces) of diced tomatoes\n1 can (about 14 ounces) of reduced-sodium chicken broth\n1 teaspoon of dried Italian seasoning\n1 cup of uncooked whole wheat couscous\n\nCooking Directions:\n\nHeat oil in large skillet over medium-high heat.\nAdd chicken; cook and stir for 4 minutes, or until lightly browned.\nAdd zucchini, tomatoes, broth and Italian seasoning.\nSimmer over low heat for 15 minutes, stirring occasionally.\nRemove from heat.\nStir in couscous, cover and let stand for 7 minutes.\nFluff with fork.\n\nMakes 4 servings.\n\nKitchen Tips and Hints:\n\nA Good Cup Of Coffee:\n* One pinch of salt in the basket will remove some of the acid taste. For clear coffee, put egg shells in after perking.
