Irvan Thomas a.k.a Uken is a Fishermen, Aquaculturist (Fish Farm), and the Owner / Operator of the newly opened Japanese restaurant Ipponzuri in Gunawarman. He has a mission to showcase Indonesia's local wild-caught to the Jakarta Market.
\\nFor Chefs, Indonesia's fishing industry is always shrouded in mystery, It's controlled by big corporations who concentrate their products for exports. It always raised questions such as; We are surrounded by oceans, but where are all the fish goes? Why we can only find a certain species of fish in the market, where are all the others? Who should we know if we want to use their product locally?
