Ignatius Gorby is the sous chef of the popular Neo Bistro restaurant in Frankfurt 'Bidlabu'. The restaurant is the perfect example of the state of Europe's dining scene which has evolved towards more casual, no-fuss upscale bistro serving more approachable food, compared to formal fine dining restaurants.

We discussed his background and Germany's amazing education program 'AUSBILDUNG'.  AUSBILDUNG is a form of apprenticeship where the student attends school and work simultaneously in order to gain both theoretical and practical knowledge at the same time. More importantly, it is free.
