Yohans Gozal is the chef-owner of Niyom Restaurant, and Niyom Express which offers modern Thai comfort food to Jakarta's markets, and soon all over Indonesia. We discussed his background cooking in restaurants in Singapore, and Australia before becoming the Head Chef of Kilo Kitchen in both Jakarta and Bali.
