Happy Sunday to you. I had a huge morning tea and didn\'t have lunch today. Mind you I had been feeling a little nauseated. The Dobinson\'s Bakery coffee card allowed me a free coffee and cake today and I went with a really rich chocolate eclair.

Spam with mushroom sauce and mango salad

Ingredients
\\n
\\n - Spam
\\n - Mushrooms
\\n - Spring onions
\\n - Butter
\\n - Cream
\\n - Dijon mustard
\\n - Sherry
\\n - Cos lettuce
\\n - Mint
\\n - Red onion
\\n - Fennel
\\n - Mango
\\n - Lime juice
\\n - Olive oil
\\n
\\n
Instructions

\\n - Shred the cos lettuce.
\\n - Slice the red onion.
\\n - Slice the fennel.
\\n - Remove the juice from a lime.
\\n - Chop the mint leaves.
\\n - Dice the Kensington Pride mango.
\\n - Toss the salad ingredients in a bowl with a little olive oil.
\\n - Don\\u2019t look up toss the salad in Urban Dictionary.
\\n - Saut\\xe9 the diced Spam in some Queensland nut oil in a hot frypan until the surface of the Spam cubes changes colour.
\\n - Remove the Spam and add the spring onions and mushrooms and saut\\xe9 until soft.
\\n - Deglase the frypan with a little cooking sherry.
\\n - Stir in some Dijon mustard, butter, and cream to make a sauce.
\\n - Add in the cooked Spam and mix through.
\\n - Serve everything on a plate.
