Happy Sunday to you. I had a huge morning tea and didn't have lunch today. Mind you I had been feeling a little nauseated. The Dobinson's Bakery coffee card allowed me a free coffee and cake today and I went with a really rich chocolate eclair.

Spam with mushroom sauce and mango salad

Ingredients

\n - Spam
\n - Mushrooms
\n - Spring onions
\n - Butter
\n - Cream
\n - Dijon mustard
\n - Sherry
\n - Cos lettuce
\n - Mint
\n - Red onion
\n - Fennel
\n - Mango
\n - Lime juice
\n - Olive oil
\n

Instructions

\n - Shred the cos lettuce.
\n - Slice the red onion.
\n - Slice the fennel.
\n - Remove the juice from a lime.
\n - Chop the mint leaves.
\n - Dice the Kensington Pride mango.
\n - Toss the salad ingredients in a bowl with a little olive oil.
\n - Don\u2019t look up toss the salad in Urban Dictionary.
\n - Saut\xe9 the diced Spam in some Queensland nut oil in a hot frypan until the surface of the Spam cubes changes colour.
\n - Remove the Spam and add the spring onions and mushrooms and saut\xe9 until soft.
\n - Deglase the frypan with a little cooking sherry.
\n - Stir in some Dijon mustard, butter, and cream to make a sauce.
\n - Add in the cooked Spam and mix through.
\n - Serve everything on a plate.
