Roast chicken thigh and frozen vegetables

I had a piece of dry brined chicken thigh in the refrigerator and some frozen vegetables I needed to finish off.

Ingredients

  • Dry brined chicken thigh
  • \\n
  • Frozen peas, corn, black beans, capsicum
  • \\n
\\n

Instructions

  1. Preheat an oven to 200 \\xb0C (392 \\xb0F).
  2. \\n
  3. In a baking tray add a stock cube, a cup of water, and a cup of frozen vegetables.
  4. \\n
  5. Put a rack on the baking tray and put the chicken thigh on top.
  6. \\n
  7. Brush some Queensland nut oil on the chicken.
  8. \\n
  9. Insert a meat thermometer.
  10. \\n
  11. Put the chicken and vegetables into the oven.
  12. \\n
  13. Cook until the target temperature reaches 78 \\xb0C (172 \\xb0F).
  14. \\n
  15. While the chicken is resting put the cooked vegetables into a frypan and heat until all the stock reduces.
  16. \\n
  17. Serve on a plate and eat.
