We wanted to investigate the science behind the beer, but it was also a great chance to find out a little more about the craft beer scene in Hong Kong.\\n Before relocating to Hong Kong, Simon was brewmaster for Pyramid Breweries in Berkeley, California, where he developed recipes and oversaw production on a 125-barrel brewhouse. Simon has been brewing beer for over 25 years.'
