Leonard and his scientist colleague made an accidental discovery in Paris when researching the creation of algae. They found a way to extract a natural blue colourant. So genius that Leonard is, he shipped off to Chicago to go pitch it to Mars for them to use it for their blue M&M\'s.  As Mars are looking to adopt more sustainable and natural ingredients.  Hear his story and how he has now relocated and built a research lab in Chicago.  He also takes us on a tour of his facilities in his mission to help create the future of cruelty-free food.
