Interview with David Suk of Saint Luna (Upscale Moonshine!)

Saint Luna - Charcoal Filtered Moonshine - 100 proof - 50% ABV

This spirit is distilled from molasses and rye, and made in Statesville, North Carolina.

Currently, you can find this spirit in Memphis, Chattanooga, and NYC.

During our interview, I enjoyed a bartender favorite, the Negroni - made with equal parts of Saint Luna, sweet vermouth, and Campari. Stir with ice, add some bitters, and you\\u2019re good to go.

David suggests another cocktail made with Saint Luna - muddled green bell pepper, fresh lime juice, Saint Luna, and simple syrup. Sounds tasty! Add a jalape\\xf1o if you like some spice in your cocktail.

Saint Luna is not barrel aged, but simply charcoal filtered which adds a smoky undertone.\\xa0

During the interview, we talk about batching signature cocktails, how David got started in the business, and what kinds of cocktails are good for Saint Luna (Lunar Mule anyone!?!)

Three Takeaways:

  1. Moonshine can be tasty! This spirit has historically had a bad rap, but Saint Luna is turning that around by creating an elevated spirit. No sugars/syrups are used in this moonshine - in fact, it drinks more like a tequila or white rum.
  2. I also learned something new today! Vodka can made of any sugar or grain - it just needs to be four times distilled, which removes any residual character you might get from different sugars (beets, potatoes, cane syrup, honey, etc.)
  3. Overproofing is a term used in the industry when you proof the spirit above 80 proof (or 40% ABV). Make sure to adjust your ratios when making a cocktail if you use an overproofed spirit.
