Living in Cambodia for a few months, Heidi fell in love not only with the people, but feeding them as well. Shopping with the women, cooking over an open fire and feeding nutritious meals - especially to the children - became a special place in her heart. Returning to the Pacific Northwest, Heidi recognized that the abundance of delicious natural ingredients would offer her the opportunity to continue that passion. She enrolled in Cordon Bleu and studied the gluten-free, dairy-free diets that she admired. She freelanced with restaurants helping them develop vegan options on the menu because the restaurants were getting requests and her reputation grew. She didn\'t want just vegan food, she wanted good tasting vegan food. She did her own manufacturing for a while, but went to outsourced production so she could spend her time designing new dishes rather than running a plant, as she puts it, "staring at spreadsheets and asking men for money".
