Plum/Blackberry Wine in carboy For the record here's the recipe Ryan cobbled together to make 1 gallon (no guarantee this will be good!): 5 lbs pitted purple plums 2 lbs washed blackberries 3 litres boiling water (I should have put in a bit less) 2.25 lbs white sugar 1 tsp pectic enzyme 1 crushed campden tablet (potassium metabisulfite) Let sit for a day 1 tsp yeast nutrient 1/2 tsp acid blend (citric acid, malic acid, and tartaric acid) 1 packet wine yeast (this seemed like a lot, but no disaster yet)
