Looking for a lighter and easy meal after the heavy drudge of holiday cooking? We certainly were and what we found that hit the spot is this Red Lentil, White Bean, and Tomato stew that we make in the pressure cooker. The flavors are very middle eastern/north african/indian and since we're using canned beans this takes under 10 minutes in either the electric or stove top pressure cooker.
