BLT With Eggplant Bacon

Eggplants are so delicious. It is honestly a versatile ingredient to use in any dish. It also makes for a great meat substitute. Today, we will make BLTs, but instead of using bacon, we will cut the eggplant into slabs of smokey "bacon," spinach, tomato, and gouda cheese. Oh, and how could I have forgotten the basil pesto spread. This sandwich is fantastic! You won't be disappointed. You will need:

This recipe will assemble at least one or two “B” LTs you can grade it up if you plan to make multiple

One medium eggplant (just half, freeze the other half), peel and sliced into bacon shape slabs

One Organic Roma Tomato

¼ cup of Organic spinach

Two Tablespoons cup of Basil Pesto ( you can make it at home or get help from the grocery store)

Two to Three slices of gouda cheese (omit or use vegan cheese)

Two tablespoons of Diary-free mayo

Bacon Marinate

Two Tablespoons of granulated garlic

Two  Tablespoons of smoked paprika

Two Tablespoons of honey

Two Tablespoons of Cayenne Pepper

A liberal splash of liquid smoke
