Recipe: Oven-baked BBQ Rork Ribs with Sweet Potato & Arugula (serves 4)

For tonight's recipe, you'll need:
- EQUIPMENT: 1 medium pot, 1 large mixing bowl, 1 large ovenproof pan OR 1 large pan and 1 large oven tray, measuring cup, measuring spoons, wooden stirring spoon, cutting board, sharp knife, tongs, can opener, paper towels, aluminum foil
- BASICS: olive oil, salt, pepper
- MEAT: 3 lb pork back ribs
- PRODUCE: 3 cups arugula, 10 pitted dates, 2 red onions, 1 white sweet potato, 1 red sweet potato/yam
- CANS & JARS: 1 8oz can chipotle peppers, 1 8oz can tomato sauce, 3 Tbsp Soy Sauce OR Paleo Soy Sauce Alternative
- SEASONINGS: garlic powder, onion powder, ground allspice, chili powder, ground guajillo chile, smoked paprika
