Recipe: Molé Chicken Stuffed Peppers (Feeds 2)

For tonight's recipe, you'll need:
- EQUIPMENT: 1 lg pan, 1 med pot with top, 1 sm oven tray measuring cup, wooden spoon, cutting board, 2x sharp knives, can opener
- BASICS: olive oil, salt, pepper, olive oil spray
- MEAT: 1 lb boneless, skinless chicken breasts
- PRODUCE: 1 red onion, 5 cloves garlic, 2-4 bell peppers (any color)
- DRY & PACKAGED: 1 cup golden quinoa, 1/2 cup semisweet chocolate chips, 1/4 cup your favorite flour (I use green banana flour for this recipe)
- CANS & JARS: 6oz can diced green chiles, 6oz can diced jalapeños, 8oz can tomato sauce, 1 Tbsp peanut butter, 1/2 cup chicken broth
- ADD'L SEASONINGS: ground cinnamon, ground allspice, ground pasilla chiles
