Recipe: Eggplant Parmesan (Feeds 6)

For tonight's recipe, you'll need:
- EQUIPMENT: 1 lg pan, 1 lg casserole dish, 2x sharp knives, can opener, cutting board, spatula, stirring spoon, tongs, measuring cup, medium pot
- BASICS: olive oil, salt, pepper
- PRODUCE: 2 lg eggplants, 1 cup fresh parsley
- DAIRY: 1/2 lb mozzarella cheese (shredded) 1/2 cup parmesan cheese (shredded)
- CANS & JARS: 12oz tomato sauce, 12ox whole peeled tomatoes
- DRY & PACKAGED: 1/2 cup flaxseed meal, 2 cups of your favorite pasta
- ADD'L SEASONINGS: oregano, garlic powder
