Recipe: Chicken, Bell Pepper & Baby Bella Satay Skewers w Home-Made Paleo Peanut Sauce (Feeds 2)

For tonight's recipe, you'll need:
- EQUIPMENT: 15-20 wooden skewers, lg pan, 3x plates, 1 regular bowl, fork or whisk, cutting board, sharp knife
- BASICS: olive oil, salt, pepper, 2 eggs
- MEAT: 1 lb boneless chicken breasts
- DRY & PACKAGED: 1/2 cup flaxseed meal
- CANNED & JARRED: 2 tbsp coconut aminos, 2 tbsp peanut butter
- PRODUCE: 1 red bell pepper, 1 green bell pepper, 1/4 lb baby bella or white mushrooms, 5-7 pitted dates
- ADD'L SEASONINGS: garlic powder, paprika, optional red pepper flakes for sauce
