Recipe: Turkey Soup with Broccoli, Quinoa, Mushrooms, Carrots & Coconut Milk (Feeds 2)

For tonight's recipe, you'll need:
- EQUIPMENT: lg pan, med/lg pot, stirring spoon, sharp knife, cutting board
- BASICS: olive oil, salt, pepper
- MEAT: 1 lb thin-sliced turkey breast cutlets OR lean ground turkey
- PRODUCE: 2 cups kale, 1 cup carrot slivers, 2 cups sliced white mushrooms, 2 cups broccoli florets, 1 red onion
- CANS & BOTTLES: 1 cup coconut milk (about 1/2 a can), 2 cups beef stock (about 1 can... or measure with measuring cup)
- ADD'L SEASONINGS: garlic powder, dried parsley, optional oregano, optional thyme
