S2E32: Cheatballs

Recipe: Zoodles with Home Made Chicken Meatballs & Pesto (Feeds 2)

For tonight's recipe, you'll need:

  • EQUIPMENT: mixing bowl, lg pan, cutting board, 2x sharp knife, tongs, spatula, peeler or spiralizer (if you'll be making your zoodles at home)
  • BASICS: olive oil (~1/3 cup), salt, pepper
  • MEAT: 1 lb ground chicken
  • PRODUCE: 1 cup basil leaves, 1 cup parsley leaves, 2 zucchinis or 1 package zucchini noodles, 3-5 cloves garlic, 1 red onion, optional carrot sticks
  • DRY & PACKAGED: 1/4 cup chickpea OR almond flour, 1/8 cup nutritional yeast, optional pine nuts 
  • CANS & BOTTLES: drizzle of apple cider vinegar OR your favorite vinegar
