For tonight's recipe, you'll need:
- EQUIPMENT: mixing bowl, lg pan, cutting board, sharp knife, tongs or spatula
- BASICS: olive oil, salt, pepper
- MEAT: 3/4 lb salmon
- PRODUCE: 3 cups arugula, 1 ripe avocado
- DAIRY: 1/4 cup cotija crumbles
- CANS & BOTTLES: drizzle of lemon juice
