For tonight's recipe, you'll need:
- EQUIPMENT: measuring cup, lg pan, med pot, tongs, stirring spoon, cutting board, sharp knife, reg spoon
- BASICS: olive oil, salt, pepper, 2 eggs
- MEAT: 1 lb boneless, skinless chicken thighs
- PRODUCE: 1 cup arugula, 2 tomatillos, 2 cloves garlic, 1 jalapeño (optional) OR 1 habañero (also optional), 1/2 ripe avocado
- DAIRY: 3 Tbsp cotija cheese
- DRY & PACKAGED: 5-8 corn tortillas
- ADD'L SEASONINGS: cayenne (optional), cumin, paprika
