Recipe: Hummus Bowl with Unicorn Yogurt

For tonight's recipe, you'll need:

  • EQUIPMENT: microwave bowl, microwave plate, mixing bowl, regular bowl, cutting board, can opener, sharp knife, plastic storage baggies, large pan, measuring cup, spatula, tablespoons
  • BASICS: salt, pepper, olive oil, 1-2 eggs
  • MEAT: none :)
  • PRODUCE: 2 cups spinach, 3-5 cloves garlic, 6-7 mint leaves, 1/2 cucumber, 3-4 cooked beets with juice
  • CANS & JARS: 6-7 pitted olives, 1 can cooked chickpeas
  • DRY & PACKAGED: 3/4 cup quinoa
  • DAIRY: 3 tbsp plain greek yogurt
  • ADD'L SEASONINGS: garlic powder
