Recipe: Avocado-Pear-Shrimp Curry

For tonight's recipe, you'll need:

  • EQUIPMENT: 1 sm pot, 1 lg pot, sharp knife, cutting board, colander, ladle for serving
  • BASICS: Salt, pepper, olive oil
  • MEAT: 1/2 lb pre-cooked shrimp
  • PRODUCE: 3-5 cloves garlic, 2 cups riced cauliflower, 1 lg ripe Bartlett pear, 1 lg ripe avocado, 1 lg yellow onion, 1 lg yukon gold potato, 1 bunch cilantro, OPTIONAL basil leaves
  • CANS & JARS: 2 tbsp yellow or green curry paste, 1 can coconut milk
  • FROZEN: 1/2 bag California mixed veggies (carrots, cauliflower, broccoli)
