- EQUIPMENT: large baking tray, cutting board, sharp knife, mixing bowl
- MEAT: 1 lb boneless, skinless chicken thighs
- PRODUCE: 5-6 brussels sprouts, 1 large sweet potato, 2 cups arugula, 1 cup broccoli slaw
- BASICS: Olive Oil, Salt, Pepper
- SEASONINGS: Thyme, Garlic Powder
- OPTIONAL: (C)raisins, Quinoa
