Beef anticucho, which is a South American version of the Mediterranean “shish kebab”, is a popular dish found on street-courts and street food stalls. Anticuchos often come with boiled potato or bread on the end of a skewer. The skewered meat is marinated in vinegar, and spices such as oregano, garlic and cumin.
