Visiting new Palatine hotspot Pinks Shrimp with LOTEC (Episode 815)

In this episode, I\u2019m joined by Chicago indie band LOTEC (Dan, Kenny and Sean) for a visit to PINK\u2019S SHRIMP & OYSTERS (773 N. Quentin Road).

LOTEC\u2019s back after being away for\u2026 decades (how is that even possible?). We talk about their just-released fourth album, \u201dSquares,\u201d what the past meant, and what the future holds for them.


As for the food from Pink\u2019s\u2026 holy shit. Thanks to owners Greg and Kristina Gaardbo for their hospitality. I\u2019d expected Pink\u2019s to be great, simply based on the fact that Greg and Kristina own the superior Chicago Culinary Kitchen (a multiple-episode Car Con Carne destination). Pink's exceeded every possible expectation. This is as good as it gets, folks.

We tried the seven seven three (fried shrimp, clam strips, oysters, white fish, frog legs & fries), the \u201csoon to be famous grilled oysters,\u201d lobster roll and east & west coast oysters. It was all so, so good. I can\u2019t pick a favorite, though I wouldn\u2019t say \u201cno\u201d more rounds of west coast oysters, grilled oysters and lobster rolls.

The food landscape is littered with plenty of seafood concepts with merely average food. Pink\u2019s makes it so you don\u2019t have to go back to any of them.
