Cooking with Jaye - Meatloaf and Mashed Potatoes

Learn to cook Meatloaf, one of my favorite dishes, with me. and roasted garlic mashed potatoes

Swiss Meatloaf  

\n

1lb Ground Beef 

\n

2 eggs

\n

 1 packet Lipton Onion Soup 

\n

mix 1 \xbc cup Italian bread crumbs  1 \xbc cup baby Swiss (grated) 1 cup chopped Celery 2 tsp Parsley 1 tsp Lawrey\u2019s Season salt Ketchup to cover the top  Mix all of this together (preferable with hands) and put in 2 loaf pans. Cover with Ketchup and bake at 350 for 1 hour.

Roasted Garlic Mashed Potatoes

6 cloves garlic, peeled 

\n

1/4 cup olive oil 

\n

7 baking potatoes, peeled and cubed 

\n

1/2 cup milk 

\n

1/4 cup grated Parmesan cheese 

\n

2 tablespoons butter 

\n

1/2 teaspoon salt 

\n

1/4 teaspoon ground black pepper  

\n

Directions 1 Preheat oven to 350 degrees F (175 degrees C). 2 Place garlic cloves in a small baking dish. Drizzle     with olive oil, cover, and bake 45 minutes, or until golden brown. 3 Bring a large pot of lightly salted water to boil. Add     potatoes, and cook until tender but firm. Drain, and transfer to     a large mixing bowl. 4 Place roasted garlic, milk, Parmesan cheese, and butter     into the bowl with the potatoes. Season with salt and     pepper. Beat to desired consistency with an electric mixer.
